Why to stand on soft 19, soft 20 and soft 21

The logic behind this strategy is basic. 19, 20 and 21 are very powerful hands so there is no need to risk hitting on a soft hand like this. There are only two cards that can improve a 19 and one card that can improve a 20. It is harder for the dealer to beat these hands or even tie them. The objective of blackjack is to get a twenty one. Therefore if you do get a soft 21, the only thing the dealer could do is tie this score.
